ИНГРЕДИЕНТЫ
Fish
- 🐟 2 fillets (160g) mackerel
Vegetables
- 1 piece ginger
- 1/2 pack kaiware sprouts
Seasoning
- 2 tbsp miso
Broth
- 3 tbsp sake
- 2 tbsp mirin
- 🍬 1 tbsp sugar
- 1/2 tbsp soy sauce
- 💧 200cc water
ШАГИ
Pat the mackerel fillets dry with paper towels and make shallow cuts on the skin side.
Peel the ginger; slice half into thin strips and the other half into thin slices. Cut the kaiware sprouts into halves.
In a frying pan, combine the broth ingredients (sake, mirin, sugar, soy sauce, water) and sliced ginger. Heat over medium heat until boiling.
Place the mackerel skin-side up into the pan and spoon the broth over the fillets.
Once the mackerel changes color, cover with a drop lid and simmer on low heat for 10 minutes.
Dissolve the miso into the broth, cover again with the drop lid, and simmer for another 3 minutes.
Plate the mackerel, drizzle with the broth, garnish with ginger strips, and serve with kaiware sprouts.
