Fish
- 🐟 200g sashimi-grade skipjack tuna
Vegetables
- 🧅 1/2 stalk green onion
Condiments
- 2 tbsp miso paste
Seasonings
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1/2 tsp grated ginger
- 💧 100ml water
ШАГИ
Cut the skipjack tuna into 1.5cm slices.
Cut the green onion into 3cm pieces and grill on a foil-lined tray in a toaster until browned, about 10 minutes.
Pour boiling water over the skipjack tuna to blanch it.
In a pot, combine the seasonings (sake, mirin, sugar, ginger, water) and heat over medium heat until bubbling. Add the skipjack tuna and simmer on low heat for 5 minutes. Dissolve miso paste into the mixture and simmer for another 5 minutes. Remove the skipjack tuna.
Continue heating the sauce over medium heat until it thickens. Plate the skipjack tuna, garnish with grilled green onion, and drizzle the thickened sauce over.
