Essential Ingredients
- 🍗 200g chicken thigh
- 🥔 2 potatoes
- 🥕 1/3 carrot
- 🍄 2 shiitake mushrooms
- 3 tbsp cornstarch
- 🍚 1 bowl cooked rice
- A small amount of cooking oil
- A small amount of sesame oil
- 🧂 A pinch of salt
- A pinch of pepper
Soy Sauce Seasoning
- 3 tbsp soy sauce
- 2 tbsp mirin
- 🍬 1 tbsp sugar
- 2 cups kelp stock
ШАГИ
Cut potatoes and carrots into 3cm pieces, and slice shiitake mushrooms into thirds.
Season chicken thigh with salt and pepper, then coat with cornstarch.
Heat a pan with oil and sear chicken thighs skin-side down until golden. Cut into bite-sized pieces.
In the same pan, stir-fry potatoes, carrots, and mushrooms. Add soy sauce seasoning and bring to a boil.
Add the seared chicken pieces to the pan and simmer until the sauce thickens.
Serve over warm rice and drizzle with sesame oil. Optionally garnish with scallions or onions.
