Cut spinach into 4cm pieces and place in a microwave-safe container with 1 tbsp of water. Cover loosely with plastic wrap and microwave at 600W for 3 minutes. Rinse with water and squeeze out excess moisture.

Trim the root of the shimeji mushrooms and separate them into bite-sized pieces. Cut chicken into bite-sized pieces.

Heat salad oil in a frying pan over medium heat. Add chicken and cook until done. Add shimeji mushrooms and sauté until softened. Add spinach and stir briefly to combine.

Mix miso, mayonnaise, garlic, and pepper in a bowl to create the sauce.

Transfer the sautéed mixture to a heatproof container. Top with the sauce and pizza cheese. Bake in a toaster oven for about 10 minutes until golden brown. Garnish with chopped green onion.
