Cut off the spinach roots and chop into 2cm pieces. Slice the cod roe and extract the contents.

Place the udon noodles in a microwave-safe container, cover loosely with plastic wrap, and heat at 600W for the time indicated on the package.

In a frying pan, add spinach and 3 tbsp of water. Cook over medium heat until spinach softens, then drain excess water.

In the same pan, add milk, water, consomme, and udon noodles. Mix and simmer over low heat until the sauce thickens.

Add spinach and cod roe to the pan, mix well, and season with salt and pepper. Serve in a bowl and top with shredded nori.
