    • 1 tbsp soy sauce
    • 1 tsp grated ginger
    • Pinch of pepper
    • 1 tsp chicken stock powder

Wash spinach thoroughly, trim roots, and cut into 3cm pieces. Microwave for 1 minute at 600W, then rinse and drain.

In a pot, bring water and seasoning ingredients (soy sauce, ginger, pepper, chicken stock) to a boil. Add vermicelli noodles, cutting them with scissors as needed.

Add tofu by breaking it into chunks with a spoon. Simmer until vermicelli softens.

Add spinach and sesame oil, mix gently, and serve.
