Seafood
- 🦑 1 cleaned squid
Vegetables
- 🍆 1 eggplant
- 🧅 1/4 onion, minced
- 🧄 1 clove garlic, minced
Condiments
- 6 pitted black olives
- 🍅 1 can diced tomatoes
- 2 tbsp olive oil
- 🧂 Salt and pepper to taste
ШАГИ
Mince the garlic and onion. Slice the eggplant into rounds.
Prepare the squid by cleaning and cutting it into bite-sized pieces.
Heat 1 tbsp olive oil in a small pan over medium heat, sauté the squid briefly until cooked, then remove.
Add the remaining olive oil and garlic to the pan, sauté the onion and eggplant until softened.
Add the canned tomatoes and simmer for 7-10 minutes until the eggplant is tender.
Add the squid and black olives, season with salt and pepper, and cook for another 2 minutes.
