- 🍠 250g sweet potato
- 🌱 6 snap peas (60g)
Dressing
- 🥚 2 tbsp mayonnaise
- 🌰 1 tbsp grain mustard
- 🍯 1 tsp honey

Trim the ends of the snap peas and remove the strings using kitchen scissors. Place them in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 30 seconds. Let them cool and tear them lengthwise.
Wash the sweet potato thoroughly and cut into bite-sized pieces. Soak in water briefly, then drain. Place in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for about 4 minutes until tender.
In a bowl, mix the mayonnaise, grain mustard, and honey to create the dressing. Add the cooked sweet potato and mix well. Plate the salad and top with the snap peas.
