    • 1/2 tbsp starch
    • 💧 1 tbsp water
  • Garnish

    • 🧅 Chopped green onion, as needed

Remove the tomato stem, make a shallow cross-cut on the opposite side, and blanch in boiling water for 20 seconds. Peel the skin, remove seeds, and cut into 2cm cubes.

Cut the tofu into 1.5cm cubes.

Heat salad oil in a pan over medium heat, add ground pork, and cook until browned. Add garlic, ginger, and doubanjiang, stirring to combine. Add sake, sugar, soy sauce, and water, then cover and simmer on low heat for 8 minutes.

Add tomato and tofu, mix gently, and simmer for 2 minutes. Stir in starch slurry and cook until thickened, about 2 minutes.

Turn off the heat, sprinkle pizza cheese on top, cover, and let sit for 2 minutes until cheese melts.

Serve on a plate and garnish with chopped green onion.
