    • 1 tablespoon concentrated mentuyu
    • 💧 100ml water
  • Toppings

    • 🥚 1 onsen egg
    • 🧅 1 tablespoon chopped green onion
    • A pinch of shichimi pepper

Cut the chicken into 3-4 pieces and place them in a plastic bag. Add sake, soy sauce, grated ginger, and grated garlic. Massage well, seal the bag, and refrigerate for 10 minutes.

Place the frozen udon in a microwave-safe container, cover loosely with plastic wrap, and heat according to package instructions. Rinse with cold water, drain, and plate.

Add tempura flour to the marinated chicken and massage until evenly coated. Heat salad oil in a pot to 170°C and fry the chicken pieces for 4-5 minutes, flipping occasionally, until golden brown.

Top the udon with fried chicken, chopped green onion, and onsen egg. Pour the dipping sauce over and garnish with shichimi pepper as desired.
