Main
- 🍗 1 piece (250g) chicken thigh
- 2 tbsp all-purpose flour
- 2 tbsp potato starch
- Enough salad oil for frying
- 1/2 pack kaiware sprouts
Marinade
- 1 tbsp sake
- 🧂 2 pinches of salt
- 1/2 tsp grated ginger
Ume Sauce
- 2 umeboshi plums
- 🧅 1/2 stalk green onion
- 🍬 1 tbsp sugar
- 2 tbsp vinegar
- 1 tsp soy sauce
- 1/2 tsp grated ginger
- 1/2 tbsp sesame oil
ШАГИ
Remove pits from umeboshi plums and mash them into a paste. Chop green onion roughly. Cut kaiware sprouts into half-length pieces.
Pat chicken dry and place it in a plastic bag. Add marinade ingredients and massage well. Let it sit for 15 minutes.
Mix all ume sauce ingredients in a bowl.
Add flour and potato starch to the chicken bag and coat the chicken thoroughly.
Heat salad oil to 170°C in a pot. Fry chicken for about 5 minutes, flipping occasionally, until cooked through. Cut into bite-sized pieces, plate, drizzle ume sauce, and garnish with kaiware sprouts.
