ИНГРЕДИЕНТЫ
Main Ingredients
- 150g fresh warabi
- 100g tsuki konnyaku
- 1/2 tsp sliced chili
- 1 tbsp sesame oil
Warabi Preparation
- 💧 600cc water
- 1/2 tsp baking soda
Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 🧂 1 tsp sugar
- 1 1/2 tbsp miso
- 1 tbsp white sesame seeds
ШАГИ
Wash the warabi and trim the hard root ends. Boil water in a large pot, turn off the heat, add baking soda, and mix. Add the warabi and let it soak for 6–8 hours. Rinse with water, drain, and cut into bite-sized pieces.
Place tsuki konnyaku in a pot, add enough water to cover, bring to a boil, and simmer on medium heat for 3 minutes. Drain the water.
Mix all seasoning ingredients (★) in a bowl.
Heat sesame oil in a frying pan, add chili, and stir-fry on low heat until fragrant. Add warabi and konnyaku, stir-fry on medium heat until coated with oil. Add the seasoning mixture and stir-fry until the liquid evaporates.
