Cut chicken thighs into bite-sized pieces. Place them in a bowl, add sake and a pinch of salt and pepper, and massage. Let sit for 10 minutes. Skewer the chicken onto bamboo sticks, making 6 skewers.

Heat salad oil in a frying pan over medium-low heat. Arrange the skewers in the pan, cover with a lid, and steam-fry for about 3 minutes.

Remove the lid, flip the skewers, and cook until the chicken is fully cooked. Flip occasionally to achieve a golden-brown color on both sides. Remove half of the skewers and sprinkle with salt and pepper.

Add the sauce ingredients (mirin, sake, sugar, soy sauce) to the pan and simmer until the sauce thickens and coats the remaining skewers.
