MALZEMELER
Meat
- 🐖 200g pork belly block
Vegetables
- 🥔 2 potatoes (300g), halved
- 🧅 1 stalk white part of green onion, sliced
- 🧅 1/2 onion, cut into wedges
- 5 perilla leaves
Seasonings
- 🧂 Pinch of salt and pepper
- 1 tbsp sesame oil
- 2 tbsp ground sesame seeds
Soup Base
- 1 tbsp sake
- 🍬 1/2 tbsp sugar
- 1 tbsp miso
- 2 tbsp gochujang
- 🧄 1/2 tsp grated garlic
- 1/2 tsp grated ginger
- 💧 300ml water
ADIMLAR
Cut potatoes in half and soak in water to remove starch. Slice green onion diagonally and cut onion into wedges.
Cut pork belly into 4 equal pieces and season with salt and pepper.
Mix all soup base ingredients in a bowl to prepare the Gamjatang sauce.
Heat sesame oil in a pot over medium heat and sear pork belly until browned on all sides.
Add potatoes, onion, and the prepared Gamjatang sauce to the pot. Stir to combine.
Bring to a boil, skim off any foam, cover, and simmer for 15 minutes until the pork is tender.
Add sliced green onion and simmer for another 2–3 minutes. Sprinkle ground sesame seeds and garnish with perilla leaves before serving.
