Main Ingredients
- 200g amberjack fillets
- 🧅 1/2 onion
- 2 shiitake mushrooms
- 2 green bell peppers
- 1/2 red paprika
- 1 1/2 tbsp salad oil
Amberjack Preparation
- 1 tsp soy sauce
- 1 tbsp sake
- cornstarch as needed
Sweet and Sour Sauce
- 🧂 2 tsp sugar
- 2 tbsp vinegar
- 1 tbsp soy sauce
- 🍅 2 tbsp ketchup
- 1/2 tsp chicken stock powder
- 💧 50ml water
- 1 tbsp cornstarch

Cut the amberjack into bite-sized pieces. Mix with soy sauce and sake in a bowl, massage gently, and let sit for 5 minutes. Pat dry with paper towels and coat both sides with cornstarch.
Cut the onion, shiitake mushrooms, green bell peppers, and red paprika into bite-sized pieces.
Mix all ingredients for the sweet and sour sauce in a separate bowl.
Heat 1/2 tbsp salad oil in a frying pan over medium heat. Cook the amberjack until golden brown on one side, flip, and cook through. Transfer to a serving plate.
Wipe excess oil from the pan, add 1 tbsp salad oil, and stir-fry the vegetables over medium heat until softened.
Add the sweet and sour sauce to the pan and simmer over medium heat until thickened. Pour over the amberjack.
