- 1 kg pork ribs
Vegetables
- 🧅 2 onions
- 🥔 2 potatoes
- 🥕 1/3 carrot
- 1.5 stalks green onion
- 2 green chilies

- 🍬 3 tbsp sugar
- 💧 5 cups water
- 1/2 cup soy sauce
- 🧄 2 tbsp minced garlic
- Pinch of black pepper
- 1 tbsp coarse chili powder
- 2 tbsp fine chili powder

Cut potatoes and carrots into large chunks, round off edges. Slice onions and green onions into large pieces. Optionally, add mushrooms and slice green chilies.
Soak pork ribs in water to remove bone fragments, then rinse each piece thoroughly under running water.
Boil pork ribs in water for 5 minutes until no blood seeps from the bones.
Drain boiled ribs and cut into bite-sized pieces.
Add pork ribs and 3 tbsp sugar to a pan and stir-fry over medium heat.
Add onions and stir-fry on high heat until caramelized.
Pour 5 cups of water into the pan and bring to a boil. Add carrots, potatoes, 2 tbsp minced garlic, and 1/2 cup soy sauce.
Simmer until the broth reduces by one-third.
Add mushrooms and 3 tbsp chili powder, then simmer briefly.
Add sliced green onions and green chilies, sprinkle black pepper, and serve.
