Julienne the carrot and cucumber.
Heat sesame oil in a frying pan over medium heat. Add sliced beef and stir-fry until the color changes. Season with salt and pepper, then add carrot and yakiniku sauce. Cook until the liquid evaporates.
Dip rice paper sheets in a bowl of water to soften them. Place them on a cutting board, add the cooked beef mixture and cucumber evenly, fold the sides, and roll tightly.
