Fish
- 🐟 200g yellowtail fillets
Vegetables
- 🥬 300g daikon radish
- 4 slices ginger
Seasoning
- 🧂 Pinch of salt
- 1 tbsp sake
- 2 tbsp mirin
- 🍬 1 tsp sugar
- 3 tbsp ponzu sauce
- 💧 200ml water
BƯỚC
Cut daikon into 2cm thick slices, peel, and halve. Microwave with 1 tbsp water for 5 minutes at 600W, then drain.
Sprinkle salt on yellowtail fillets and let sit for 5 minutes. Pat dry and cut into bite-sized pieces.
Add all seasoning ingredients to a pot and heat over medium. Once boiling, add yellowtail and skim off foam. Add daikon and ginger, cover, and simmer on low for 10 minutes.
Remove fish, daikon, and ginger. Reduce the remaining sauce over medium heat until glossy.
Pour the reduced sauce over the plated fish and daikon.
