Fish
- 200g buri fillet
Vegetables
- 300g daikon, julienned
- 🥕 1/3 carrot, julienned
- 🥬 2 lettuce leaves
Seasoning
- 🧂 1/4 tsp salt for vegetables
- 🧂 Pinch of salt for fish
- 1 tbsp potato starch
- 1 tbsp mayonnaise
- Sweet chili sauce, as needed
Oil
- Salad oil, as needed
Sweet Vinegar
- 🍬 1 tbsp sugar
- 🧂 1/4 tsp salt
- 3 tbsp vinegar

Tear lettuce into bite-sized pieces. Peel and julienne daikon and carrot, sprinkle with 1/4 tsp salt, massage, and squeeze out excess water.
Mix sugar, salt, and vinegar in a bowl. Add daikon and carrot to create sweet vinegar pickles.
Cut buri into bite-sized pieces, sprinkle with a pinch of salt, let sit for 10 minutes, then pat dry and coat with potato starch.
Heat salad oil to 170°C and fry buri pieces for 2–3 minutes until golden brown.
Cut hot dog buns, spread mayonnaise, and layer lettuce, fried buri, pickled vegetables, and sweet chili sauce.
