Cut napa cabbage into 2cm wide pieces and separate shimeji mushrooms by hand.

Trim excess fat and tendons from chicken thigh, cut into 6 pieces, season with salt and pepper, and coat with flour.

Heat butter in a pan over medium-low heat, add chicken skin-side down, and cook for 2 minutes until browned. Flip and cook for another 2 minutes. Add napa cabbage and shimeji mushrooms, stir until coated with fat.

Add white wine, consomme, and salt, mix well, and bring to a boil. Cover and simmer on low heat for 5 minutes. Add heavy cream, mix, and simmer for 3 minutes uncovered until thickened.

Serve on a plate and sprinkle with black pepper.
