- 🍗 1 chicken thigh (250g)
- 🧂 Pinch of salt and pepper
Filling
- 🍗 100g ground chicken
- 🧅 1/4 onion (50g), minced
- 🍄 4 mushrooms, chopped
- 4 green olives, sliced
- 1 tbsp potato starch
- 🧂 1/3 tsp salt
- 🧂 Pinch of pepper
Sauce
- 3 tbsp balsamic vinegar
- 🍬 1/2 tbsp sugar
- 🧂 1/4 tsp salt
- 2 tbsp meat juice
BƯỚC
Mince the onion, chop the mushrooms, and slice the green olives.
Flatten the chicken thigh to an even thickness using a rolling pin, season with salt and pepper.
Mix the filling ingredients in a bowl until well combined.
Spread the filling onto the chicken thigh, roll it up, and wrap tightly with parchment paper.
Steam the wrapped chicken for 20–25 minutes over high heat, then let it cool. Reserve 2 tbsp of meat juice.
Simmer the sauce ingredients in a pan until slightly thickened.
Slice the galantine into serving pieces.
Plate the slices and drizzle with balsamic sauce.
