Meat
- 150g thinly sliced pork belly
Vegetables
- 🥒 1 cucumber (250g), large size
- 6 shiso leaves
Condiments
- 2 ume plums
- 🧂 Pinch of salt and pepper
Oil
- 1 tsp salad oil
Seasoning
- 1 tbsp sake
- 1/2 tbsp mentsuyu (3x concentrated)
- 🧂 Pinch of salt and pepper
BƯỚC
Cut off the ends of the cucumber, halve it lengthwise, remove seeds and pulp, and slice into 1cm pieces. Tear shiso leaves into small pieces and mash ume plums into a paste.
Cut pork belly into bite-sized pieces and season with salt and pepper.
Heat salad oil in a frying pan over medium heat and cook pork until browned and crispy.
Add cucumber to the pan and stir until coated with oil. Mix in ume plum paste and seasoning ingredients. Finally, add shiso leaves and stir briefly.
