- 1 tbsp sakura shrimp
- 🥚 1 beaten egg
- 🧅 Chopped green onion, as needed
Thickener
- 1 tsp potato starch
- 💧 1 tsp water
Soup Base
- 1/2 tsp grated ginger
- 🧂 1/4 tsp salt
- 1/3 tsp chicken stock powder
- 1 tbsp sake
- 💧 200cc water

Add all soup base ingredients to a pot and bring to a boil. Add sakura shrimp and vermicelli, then simmer over low heat until the vermicelli softens.

Mix potato starch and water to create a slurry. Add the slurry to the pot to thicken the soup. Pour in the beaten egg and cook until the egg sets softly.

Serve the soup in a bowl and garnish with chopped green onion.
