- 🍆 1 medium eggplant (80g)
- 🥒 1 medium cucumber (100g)
Seasonings
- 🧂 1/4 tsp sugar
- 1/2 tbsp miso
- 1 tbsp white sesame seeds
- 2 tbsp mayonnaise
- A pinch of grated ginger
BƯỚC
Cut off the stem of the eggplant, remove the calyx, and slice it thinly diagonally. Trim the ends of the cucumber and slice it thinly.
In a bowl, mix 1/2 tsp salt and 100cc water. Add the eggplant and cucumber, mix well, cover with plastic wrap, and let sit for 10 minutes until softened. Rinse with water and squeeze out excess moisture.
In a bowl, mix all the seasonings (sugar, miso, sesame seeds, mayonnaise, and ginger). Add the eggplant and cucumber, and toss to combine.
