- 🍆 2 eggplants
- 🧅 1/2 onion, minced
Meat
- 150g ground pork
Seasoning
- 🧂 Pinch of salt and pepper
- 1/2 tbsp sake
- 1/2 tbsp soy sauce
- 1 tsp chicken stock powder
- 1/2 tbsp sesame oil
- 1/2 tbsp potato starch
Cooking Oil
- 1 tbsp salad oil
Optional Garnish
- Chopped green onion, as desired
- Shiso leaves, as desired
- Ponzu sauce, as desired
Preparation
- 💧 500cc water
- 🧂 2 tsp salt

Mince the onion finely.
Remove the stem and calyx from the eggplants, then slice them lengthwise into 3-5mm thick pieces.
In a bowl, mix water and salt (from preparation ingredients), then soak the eggplant slices for about 10 minutes. Drain well.
In another bowl, knead the ground pork with salt and pepper until sticky.
Add minced onion and the remaining seasoning ingredients to the pork mixture. Mix thoroughly.
Dust the surface of the eggplant slices with potato starch, place the pork mixture on top, fold the slices, and shape them neatly.
Heat salad oil in a frying pan over medium heat. Arrange the folded eggplant dumplings and cook until golden brown.
Flip the dumplings, cover the pan, and cook on low heat for 4 minutes to ensure they are fully cooked.
Serve on a plate, garnish with shiso leaves and green onions, and enjoy with ponzu sauce.
