Slice the eringi mushrooms in half lengthwise, then cut into thin diagonal slices.
Heat salad oil in a frying pan over medium heat, add the eringi mushrooms, and stir-fry until softened.
Add butter, sake, and soy sauce to the pan, and stir-fry to combine. Add katsuobushi and white sesame seeds, and quickly stir-fry.
