- 🍖 500g bone-in beef short ribs
Vegetables
- 🥕 75g carrot, peeled and cut
- 🧅 55g green onion, sliced
Nuts & Seeds
- 🌰 60g boiled chestnuts
- 6 cooked ginkgo nuts
Seasoning
- Red pepper threads, as needed
Broth Ingredients
- 🧅 1 green onion top
- 🧄 1 clove garlic
- 1 slice ginger
- 1 tbsp sake
- 💧 400ml water
Grated Ingredients
- 🍐 1/4 pear, grated
- 🍎 1/4 apple, grated
- 🧅 50g onion, grated
- 🧄 1 clove garlic, grated
- 1/2 slice ginger, grated
Seasoning Mix
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tbsp sugar
- 2 tbsp soy sauce
- Pinch of black pepper
BƯỚC
Soak beef short ribs in water for 1–2 hours in the refrigerator to remove blood. Pat dry with paper towels.
Prepare garlic and ginger for the broth by peeling and slicing thinly.
Make small cuts in the beef ribs to help them cook evenly.
In a pot, combine beef ribs and broth ingredients. Heat over medium until boiling, then cover and simmer on low for 30 minutes.
Prepare vegetables: peel and cut carrot into bite-sized pieces, slice green onion, and peel garlic and ginger for grated ingredients.
Grate pear, apple, onion, garlic, and ginger for the seasoning mix.
Separate the broth and ingredients from step 4, reserving 200ml of broth.
In a pot, combine reserved broth, grated ingredients, vegetables, and seasoning mix. Simmer on low for 30 minutes until vegetables are tender.
Add chestnuts and ginkgo nuts, cooking for an additional 2 minutes. Increase heat to reduce liquid and coat ingredients with the sauce.
Serve on a plate and garnish with red pepper threads.
