Trim the ends of the green beans and cut them into 3cm pieces. Slice the garlic thinly.
Cut the octopus into bite-sized pieces and roughly chop the anchovy fillets.
Heat olive oil in a frying pan over medium heat. Add garlic, anchovy, and octopus, and stir until the oil is infused and the ingredients are coated.
Add the green beans and stir-fry until cooked through. Season with salt and pepper to taste.
