Vegetable
- 🍆 3 medium eggplants (240g)
- 5 shiso leaves
- 1/2 tsp grated ginger
Oil
- 2 tbsp salad oil
Seasoning
- 1 tbsp mirin
- 🧂 1 tsp sugar
- 1 tbsp soy sauce
- 1/3 tsp Japanese dashi powder
- 💧 150 ml water
BƯỚC
Cut off the stem of the eggplants, slice them in half lengthwise, and score the skin in a crosshatch pattern. Soak in water briefly and drain. Slice the shiso leaves into thin strips.
Heat salad oil in a frying pan over medium heat. Place the eggplants skin-side down and cook for about 3 minutes until the color brightens. Flip and cook for another 3 minutes until browned.
Wipe off excess oil with a paper towel. Add the seasoning ingredients (mirin, sugar, soy sauce, dashi powder, and water) and mix quickly. Simmer on low heat for 2 minutes, then let cool.
Serve on a plate, topped with shiso leaves and grated ginger.
