- 🍆 160g eggplant, chopped
- 🍄 100g shimeji mushrooms
Seasoning

- 🍅 200g canned chopped tomatoes
- 🧂 1/3 tsp salt
- 1 tbsp olive oil

Cut the Pacific saury fillets into bite-sized pieces.
Trim the eggplant and cut it into bite-sized pieces. Separate the shimeji mushrooms into small clusters.
Mix the canned tomatoes, salt, and olive oil in a bowl to prepare the sauce.
Place the eggplant and shimeji mushrooms in a heatproof dish. Pour the sauce over the vegetables, then layer the Pacific saury on top. Sprinkle with salt and pepper, and add shredded pizza cheese.
Bake in a preheated oven at 200°C for about 25 minutes, until the vegetables are tender and the cheese is golden brown.
