- 🍗 50g ground chicken
- 🧈 150g firm tofu
Vegetables
- 🍄 6 shiitake mushrooms
- 🧅 1 tbsp chopped green onion
Seasoning
- 1 tbsp sake
- 🧂 1/3 tsp salt
- A pinch of pepper
Other
- Potato starch as needed
- 1/2 tbsp salad oil

Wrap the firm tofu in kitchen paper, place it on a microwave-safe plate, and heat it in a 600W microwave for 2 minutes. Let it cool.
Trim the stems of the shiitake mushrooms, mince the stems finely, and set aside.
In a bowl, mix the tofu, minced shiitake stems, ground chicken, chopped green onion, and seasonings (sake, salt, and pepper). Divide the mixture into 6 equal portions and shape into small patties.
Sprinkle potato starch on the inner side of the shiitake mushroom caps and place a patty on each cap. Prepare 6 pieces in total.
Heat salad oil in a frying pan over medium heat. Place the mushrooms with the caps facing up and cook until golden brown. Flip them, cover with a lid, and cook on low heat for about 2 minutes until fully cooked.
