Pat the yellowtail fillets dry with paper towels. Place them in a plastic bag with shio koji, ensuring they are evenly coated. Refrigerate for at least 1 hour.
Trim the stems of the shishito peppers slightly above the base and make a vertical slit in each pepper.
Heat salad oil in a frying pan over medium-low heat. Add the shishito peppers and cook for about 3 minutes until softened and browned. Remove from the pan.
Place the marinated yellowtail fillets in the pan and cook for 2–3 minutes on each side over medium-low heat until browned and cooked through.
