Fish
- 2 fillets of hamachi
Vegetables
- 10 cm green onion, julienned
- 2 slices of ginger
Liquids
- 200 ml water
Seasonings
- 2 tbsp miso
- 3 tbsp sake
- 2 tbsp mirin
- 🍬 1 tbsp sugar
- 1/2 tbsp soy sauce

Julienne the green onion.
In a frying pan, bring water to a boil and add sake, mirin, sugar, soy sauce, and ginger. Bring to a boil again, then add the hamachi fillets. Simmer over medium heat while spooning the broth over the fish until the color changes.
Dissolve miso into the broth, cover with a drop lid, and simmer for another 10 minutes. Serve the hamachi on a plate, drizzle with the broth, and garnish with julienned green onion.
