- 🐟 2 fillets (150g) frozen oilfish
Seasoning
- 🧂 1/4 tsp salt
- Pinch of pepper
Coating
- 🍞 1/3 cup breadcrumbs
- 🌿 1 tsp dried basil
- 🥚 1 egg
- 🌾 3 tbsp all-purpose flour
- 💧 1 tbsp water
Cooking Oil
- Enough salad oil for frying

In a bowl, crack the egg and mix it. Add flour and water, then mix to create the batter.
In a tray, combine breadcrumbs and dried basil.
Defrost the oilfish fillets, sprinkle with salt, and let sit for 5 minutes. Pat dry with paper towels, then season with pepper. Dip the fillets into the batter, then coat with the breadcrumb mixture.
Heat salad oil in a frying pan to 170°C (340°F), ensuring the oil is about 1cm deep. Fry the coated fillets until golden brown.
