Wash the hotaru ika and remove the cartilage, eyes, and beak.
Cut the watercress into bite-sized pieces, place in a microwave-safe bowl with 1 tbsp of water, and microwave at 600W for 2 minutes. Cool under running water and squeeze out excess moisture.
In a bowl, mix ponzu sauce and mustard. Add the watercress and hotaru ika, and mix until evenly coated.
