Cut the bamboo shoots in half lengthwise and rinse off any white residue. Separate the top 5cm of the shoots, slicing them in half lengthwise. Thinly slice the base of the shoots. Slice the garlic thinly and remove its core.
Heat olive oil, garlic, and chili in a frying pan over medium heat until fragrant. Add the bamboo shoots and sauté for 2–3 minutes until golden brown. Add salt and parsley, then stir briefly.
