- 150g lotus root
- 4 shiso leaves, sliced
Condiments
- 1 ume plum, mashed
- 2 tsp ponzu sauce
- 2 tbsp mayonnaise

Slice shiso leaves thinly and mash the ume plum into a paste.

Cut lotus root in half lengthwise, slice thinly, and soak in water to remove excess starch.

Boil lotus root slices in water for 2 minutes, then drain and let cool.

Mix boiled lotus root with ponzu sauce in a bowl, let cool, then add mayonnaise, mashed ume plum, and sliced shiso leaves. Mix well.
