    • 🍄 100g enoki mushrooms
    • cornstarch as needed
    • 🧅 chopped green onions as needed
    • 1 tbsp salad oil

    • 1 tbsp sake
    • 3 tbsp concentrated soy sauce
    • 💧 200ml water
  • Thickening Mixture

    • 1/2 tbsp cornstarch
    • 💧 1/2 tbsp water

Cut the root off the enoki mushrooms and slice them into 2cm pieces. Wrap the tofu in paper towels and let it drain for 20 minutes, then cut it in half and lightly coat with cornstarch.

If the beef slices are too large, cut them into bite-sized pieces.

In a pot, combine the sauce ingredients and bring to a boil. Add the beef and skim off any foam, then add the enoki mushrooms and simmer on low heat for 2–3 minutes. Stir in the thickening mixture and cook until the sauce thickens.

Heat salad oil in a frying pan over medium heat. Gently place the tofu in the pan and cook until both sides are golden brown.

Plate the tofu, pour the meat sauce over it, and garnish with chopped green onions.
