BƯỚC
Trim the base of the shimeji mushrooms and separate them into small clusters.
Cut open the mentaiko and extract the roe.
Boil a pot of water, add salt (not listed in ingredients), and cook the spaghetti 1 minute less than the package instructions. Reserve 2 tbsp of pasta water and drain the rest.
Heat butter in a frying pan over medium heat, add shimeji mushrooms, and sauté until tender. Add spaghetti, mentaiko, reserved pasta water, and soy sauce, then stir-fry briefly.
Plate the pasta and garnish with chopped green onions and shredded nori.
