- 25g mentaiko
- 🧈 10g salted butter

- 1 tbsp mirin
- 🧂 1/2 tsp sugar
- 1/2 tsp soy sauce

Cut open the mentaiko and extract the contents.
Crack eggs into a bowl and mix thoroughly. Add mentaiko and seasonings (mirin, sugar, soy sauce), then mix again.
Heat a tamagoyaki pan over medium-low heat and spread butter evenly using a paper towel. Pour 1/3 of the egg mixture into the pan, spread it out, and cook until semi-set. Roll the egg from the far side to the near side, then push it to the far side of the pan. Repeat until all egg mixture is used.
