Breadcrumbs
- 4 tbsp breadcrumbs

Pat the amberjack fillets dry with paper towels, season with salt and pepper, and coat with flour. Dip into the egg mixture, then coat with the breadcrumb mixture.
Heat olive oil and minced garlic in a frying pan over low heat until fragrant. Add the coated fillets and cook on medium heat until golden brown. Flip and cook on low heat for 5–6 minutes until fully cooked.
