- 4 sheets spring roll wrappers

- 🦐 200g peeled shrimp
Vegetable
- 🌱 40g frozen shelled edamame
Oil
- Enough salad oil for frying
Seasoning
- 1 tbsp cornstarch
- 2 tbsp mayonnaise
- 🍬 1/4 tsp sugar
- 🧂 1/3 tsp salt
- 1/3 tsp chicken broth powder
- A pinch of pepper
Binding
- 1/2 tbsp flour
- 💧 1/2 tbsp water

Cut each spring roll wrapper into quarters.
Prepare shrimp by removing veins with a toothpick, rubbing with 1 tsp cornstarch, rinsing, and patting dry. Chop shrimp into small pieces.
Mix chopped shrimp with cornstarch, mayonnaise, sugar, salt, chicken broth powder, and pepper in a bowl to create the shrimp mayo mixture.
Place 1/16 of shrimp mayo and edamame on a wrapper quarter, roll tightly, and seal with flour-water mixture. Repeat for all rolls.
Heat 1 cm of salad oil in a pan to 170°C and fry rolls for 1–2 minutes, turning until golden brown.
