Vegetables
- 1/2 bunch mitsuba
- 1 pack nameko mushrooms
Protein
- 1 piece aburaage (fried tofu)
Seasoning
- 2 tbsp miso
- 1/3 tsp Japanese dashi powder
Liquid
- 💧 400 ml water

Cut off the root of mitsuba and chop into bite-sized pieces. Slice aburaage into 5mm strips. Wash nameko mushrooms and drain.

Heat water and dashi powder in a pot. Once boiling, add nameko mushrooms and aburaage. Simmer on low heat for 2 minutes.

Dissolve miso into the soup, turn off the heat, and add mitsuba. Serve immediately.
