- 🍤 3 peeled shrimp

- 1 tbsp salad oil

- 1 tbsp concentrated soy sauce (3x)
- 💧 1 tbsp water

Cut the mitsuba into bite-sized pieces after removing the roots.
Mix the eggs, soy sauce, and water in a bowl.
Heat half of the salad oil in a frying pan, sauté the mitsuba and shrimp over medium heat, season with salt and pepper, and set aside.
Wipe the pan clean, heat the remaining oil, pour in the egg mixture, and when the edges start to set, place the shrimp and mitsuba on one side and fold the omelette in half.
