Rice Base
- 1 pack sushi tofu skin
- 🍄 4 fresh shiitake mushrooms
- 🍄 3 button mushrooms
- 2 cups soaked mixed grains
- 1 handful baby greens
- 2 tbsp perilla oil
- 2 cups kombu stock
Seasoning Sauce
- 2 tbsp soy sauce
- 1.5 tbsp chili powder
- 1 tbsp kombu stock
- 1 tbsp mirin
- 1 green chili
- 1.5 tbsp minced scallion
- 1 tbsp minced garlic
- 1 tbsp sesame oil
- A pinch of sesame seeds
BƯỚC
Wash the grains thoroughly and soak them for 30 minutes.
Clean and slice the mushrooms. Cut the shiitake caps thickly and shred the stems. Slice button mushrooms to preserve their shape.
Squeeze excess moisture from the tofu skin and slice it into strips.
Heat a pot and add perilla oil. Stir-fry the mushrooms and tofu skin lightly.
Add the soaked grains to the pot and stir to coat them with the oil.
Pour in the kombu stock, cover, and bring to a boil. Reduce heat and simmer for 10 minutes until the grains are fully cooked.
Turn off the heat and let the rice rest for 10-15 minutes.
Mix the rice gently to combine all ingredients evenly.
Prepare the seasoning sauce by mixing soy sauce, chili powder, kombu stock, mirin, green chili, scallion, garlic, sesame oil, and sesame seeds.
Serve the rice in bowls and top with baby greens. Drizzle the seasoning sauce and mix before eating.
