In a bowl, mix the oysters with potato starch. Add enough water to cover and gently wash the oysters. Replace the water until it becomes clear, then drain and pat dry with kitchen paper.

In a pot, heat olive oil, garlic, salt, and chili over low heat. Add oysters and simmer over medium heat for 3–5 minutes. Add pea sprouts and stir until slightly wilted.
