- 1/2 bitter melon (125g)
- 1 myoga
Seasoning
- 🧂 1/2 tsp salt
Pickling Mixture
- 🍬 1 tbsp sugar
- 🧂 1/3 tsp salt
- 🍶 2 tbsp vinegar

Cut the bitter melon in half lengthwise, remove seeds and pith, and slice thinly. Place in a bowl with 1/2 tsp salt, massage, and let sit until softened. Rinse with water and squeeze out excess moisture. Slice myoga thinly and soak briefly in water, then drain.
Mix the pickling ingredients (sugar, salt, vinegar) in a bowl. Add the bitter melon and mix well. Cover with cling wrap and let marinate for 10 minutes. Add the myoga and mix lightly.
