Vegetables
- 🍆 3 eggplants
- 🧅 1/2 onion, minced
Meat
- 200g minced pork
Oil
- 3 tbsp olive oil
Dairy
- 🧀 30g pizza cheese
Herbs
- A pinch of dried parsley
Pasta
- 10 wonton wrappers
Tomato Sauce
- 🍅 1 can diced tomatoes
- 🧄 1 clove garlic, minced
- 1 tsp consomme
- 🧂 A pinch of salt
- A pinch of pepper
- 3 tbsp ketchup
BƯỚC
Slice the eggplants thinly and mince the onion and garlic.
Roughly mince the pork.
Heat 1 tbsp olive oil in a pan over medium heat, cook half of the eggplant slices until browned on both sides, then set aside. Repeat with the remaining eggplant.
In the same pan, heat 1 tbsp olive oil, add the minced pork and onion, and cook over medium heat until the pork changes color. Add all tomato sauce ingredients and mix well. Cover and simmer on low heat for 5 minutes.
Uncover and simmer for an additional minute on low heat to thicken the sauce.
In a heatproof dish, layer half the eggplant slices, half the wonton wrappers, and half the tomato sauce. Repeat the layers and top with pizza cheese. Bake in a toaster oven for 15 minutes or until the cheese is golden brown.
