    • 1 tsp vinegar

Remove seeds and pulp from the pumpkin, dice into 2cm pieces. Peel and dice the potato into bite-sized pieces. Place both in a microwave-safe container with 1 tbsp water, cover loosely with plastic wrap, and microwave at 600W for 5 minutes. Drain water and return to the container.

While still hot, add the seasoning mix (salt and vinegar) to the pumpkin and potato. Mash roughly with a fork and let cool.

Add the cucumber, mayonnaise, and pepper to the cooled mixture. Mix until the mayonnaise is evenly incorporated.
