    • 🎃 200g pumpkin, diced

    • 🧅 50g onion, thinly sliced

  • White Sauce

    • 🧈 20g salted butter
    • 1 tbsp all-purpose flour
    • 🥛 200ml milk
    • 1/3 tsp consomme powder
    • 🧂 1/4 tsp salt
    • A pinch of pepper

Cut the pumpkin into bite-sized pieces and remove seeds. Dice the sweet potato into 2cm cubes and soak in water. Drain and microwave both with 1 tbsp water for 4 minutes at 600W. Slice the onion thinly.

Heat butter in a pan over medium heat. Add onion and sauté until softened. Add pumpkin and sweet potato, stirring to combine. Add mixed beans and flour, cooking on low heat until no longer powdery.

Add the remaining white sauce ingredients and cook over medium heat for 3–4 minutes until thickened.

Divide the mixture into heatproof dishes. Top with shredded cheese and bake in a toaster for 5 minutes until golden brown. Garnish with parsley.
